    At Water Grill, the raw bar rules. Always has. And in downtown Los Angeles, Water Grill is an institution on the order of Tadich Grill in San Francisco (though not nearly as old). I don't know what it is about being away from home, but it seems to bring out a craving for seafood.   11. Craig Claiborne cooked up a new recipe

    The late Craig Claiborne introduced many things to North Americans as food editor of The New York Times. The list, according to the jacket flap of a just-published biography, includes: "creme fraiche, arugula, balsamic vinegar, the Cuisinart, chef's knives, even the salad spinner." He helped make household names of professional chefs like Pierre Franey, Jacques Pepin and Paul Prudhomme, and "home cooks" like Madhur Jaffrey, Marcella Hazan, Virginia Lee and Diana Kennedy. He even gave Julia Child a crucial boost by praising "Mastering the Art of French Cooking."

    Food lends itself to good writing because, as M.F.K. Fisher so famously wrote long ago, writing about food often means writing about &ldquo;other, deeper needs for love and happiness.&rdquo; In defense of her craft and her subject, she declared: &ldquo;There is a communion of more than our bodies when bread is broken and wine is drunk.&rdquo; What was true in 1943's &ldquo;The Gastronomical Me&rdquo; is certainly true in 2012. If anything, the appetites seem sharper in this schizophrenic age where computerized whiz-bangeries distract us from a gray, downsized reality. Looking to feed a literal and figurative hunger are scores of food writers, chefs, food bloggers and even would-be food TV stars.
